We don’t have space for a smoker yet, but were very excited to experiment with trying to get our simple gas BBQ to give us some smokey flavour and bark .
It ended up being a 2 day experiment – whilst we got lots of smoke into the pork we didn’t quite get enough heat through it on day one, hence the need for a day 2!! Covered in a typical BBQ spice rub and marinated for a good while too!

Marinated in miso, soy and then little bits of garlic and rosemary pushed into the skin! A combo of marionskitchen and jamieoliver ‘s recipes.
Slow cooked at 150 for 3 hours then blasted for 30mins to make it crispy and crunchy…it was so juicy and beautiful, mega proud of this one!!!
