Put some lunch together after a cooking class with my Aussie family ladies, traceympotter , katrinanbrettacko and montana_acko.7 making some pork and prawn dumplings! Super juicy filling, crispy bottoms dunked in soy sauce with chilli oil  super delicious!
1. In bowl mix 500g pork mince, 2-300g chopped prawns, spring onion, coriander, garlic, ginger, white pepper, sesame oil, soy sauce, chicken stock and cornflour.
2. Put a teaspoon of mix in the middle of a gyoza wrapper and pleat into a dumpling shape
3. Shallow fry in some oil for a few mins until the bottoms are crispy, pour in half a cm of boiling water into the pan and place a lid on
4. Steam for 5-6 mins, don’t let the pan run dry, add a little more water as required
5. Take lid off until the excess water has evaporated and the bottoms are crispy again
6. Serve with soy sauce, chilli oil and vinegar (or whatever you like to dip your dumplings into!)
