Threw together a calorie friendly chicken and leek pie after a long old day – actually pulled together in like 40 mins including cooking  not beehhhd.
1. Microwave some spud.lite potatoes until soft – mash with some skimmed milk and salt and pepper (I keep the skin on, life’s too short!)
2. Sauté loads of leeks for 5 mins in some stock – add in some chopped chicken breast and cook through
3. Add in some more stock, mustard, thyme, low fat sour cream and season – cook until thickened (I had to pop a bit of cornflour and water in at the end)
4. Pour into a dish, and top with the mash. Sprinkle a bit of cheese on top and bake in a hot oven for 20 mins. Yum!

A more normal dinner for us! Quick simple healthy weeknight dinner. Fried 2 skinless salmon fillets (2 mins each side) just seasoned with salt and pepper. Then sautéed some pak choi and broccolini in some ginger, garlic, lemongrass and soy sauce. 10 mins from start to finish! Nommmmm…

Nommmmmm healthier lamb souvlaki  it’s actually a woolworths_au recipe believe it or not, and we have both been mega impressed with it! Mega tasty and fresh, wrapped up with some of my home made tabbouleh 
1. Cut up lamb leg steaks into 1inch cubes – place in a bowl with olive oil, lemon zest and garlic (I went rogue and threw some lemon juice and salt and pepper in too)
2. Thread onto kebabs and BBQ super hot for 3-5 mins (turning regularly)
3. Leave to rest – make a sauce with fat free Greek yoghurt, garlic, mint, cucumber and lemon juice (I embellished this bit too) and mix together
4. Serve the kebab on a low carb wrap with cucumber, tomato and some of the dressing – we had tabbouleh in there too
